    Four Famous Ethnic Cookies Instructor Laurel Severson Learn to create the rolled Norwegian cookies, Krumkakes, made with cream, butter and cinnamon or sometimes flavored with vanilla. For generations, Minnesotans have purchased their irons to bake Krumkakes from local manufacturer Nordic Ware in St. Louis Park. Italian Pizzelles are also baked on top of the stove using an iron, but are flat, anise-flavored cookie or they may also be flavored with vanilla. The chewy, Swedish Sandbakkelse are delicate golden brown in color and are baked in tiny tins to resemble tarts. Finally, we will master deep-fried Rosettes - those exceedingly fragile, paper-thin Scandinavian delicacies dusted with confectioners' sugar. Expect great recipes plus the many tips and techniques that will make your baking a success! Please bring containers to bring your creations safely home.     Scandinavian Gourmet Dinner Instructor Laurel Severson From those northern countries of Sweden, Norway, Denmark and Finland, we will create an assortment of super entrees and desserts balanced with soup and salad, but NO lutefisk! A larger class will include 12 recipes with fewer ones for a smaller group. Included will be apple stuffed pork loin, Swedish meatballs, salmon with dill and lemon, cold poached salmon, carrot casserole, spinach soup, pineapple beet salad and cheese sticks, and of course great desserts!
