Learn the fine points in making the dough, baking, storing and of course how to serve lefse - bonus is a bit of history and humor too. We will begin with real potatoes using a number of authentic recipes - and a modern version using instant potatoes.     Four Famous Ethnic cookies Learn to create the rolled Norwegian cookies, Krumkakes, made with cream, butter and cinnamon or sometimes flavored with vanilla. For generations, Minnesotans have purchased their irons to bake Krumkakes from local manufacturer Nordic Ware in St. Louis Park. Italian Pizzelles are also baked on top of the stove using an iron, but are flat, anise-flavored cookie or they may also be flavored with vanilla. The chewy, Swedish Sandbakkelse are delicate golden brown in color and are baked in tiny tins to resemble tarts. Finally, we will master deep-fried Rosettes - those exceedingly fragile, paper thin Scandinavian delicacies dusted with confectioners' sugar. expect great recipes plus the many tips and techniques that will make your baking a success!     Holiday Cookies / Tin Treats Homemade cookies and treats are always a wonderful thoughtful gift around the holidays and throughout the year as well. Continue a tradition that has spanned generations or start a new one by participating in one or all of these classes designed to help fill your holiday cookie tins for gifting. The ones lucky enough to receive a cookie tin from you will be remembering your treats for months beyond the holidays! Make it a family-fun affair and have your children or significant other join you. You will feel like a professional baker, and will more than likely end up making these treats throughout the year…but SHHHHHH! Each one of these recipes is one of the instructors’ personal secrets that she is sharing for the first time outside of her own home. Start early to prevent a rush as the holidays draw nearer and nearer. Tips for freezing these treats will also be shared. Participants will receive an ingredient list / station prep handout a week before class. Participants will also receive a PDF of the instructor’s recipes used for each of the classes. The length of each class will be determined by the amount of time needed for each of the recipes. Time may go a little longer or a little shorter. Come join in the fun!     Back to School Survival: 30 - 40 Minute Meals Thirty to forty minute meals can seem impossible during a busy weeknight after the day has ended, you are tired, and there are hungry people all around. Newsflash! These wonderful meals are definitely possible! No need to resort to frozen processed food, or fast food when you are in a pinch for time. Learn the foundations, and tips and tricks to be successful in mastering the skills to prepare quick 30 to 40 minute home-cooked nourishing meals in your kitchen by registering and participating in all, or some of the cook-along classes outlined below. You will feel like a pro as your confidence grows, and will realize that you can create your own quick meal ideas by adapting your favorite recipes and using the skills learned during these amazingly fun-filled classes. Participants will receive an ingredient list / station prep handout a week before class. Participants will also receive a PDF of the instructor’s recipes used for each of the classes. Classes will run for no more than an hour to allow time for questions. Note: One registration fee for these online classes can include participants from the same household only. If children are participating, adult supervision is required. Tess Georgakopoulos has been cooking for well over 40 years since she was roughly 6 years old. Born into a Greek family, the art of cooking traditional meals using one’s senses rather than recipes and measurements was passed on from one generation to the next. Her father was also a trained chef who brought the magic of food to life in another form on the weekends as they cooked elaborate family meals together. Food prepared from the heart, with one’s own hands and creativity was, and continues to be an expression of love in her home.     Traditional Italian Cuisine with Chef Jeff Sandino Enjoy the marvelous flavors of traditional Italian cuisine starting with "Panzanella," a toasted bread salad with refreshing summer vegetables in a light vinaigrette. You’ll prepare “chicken saltimbocca” using thin sliced prosciutto ham and fresh sage in a lemon, caper, artichoke butter sauce. You’ll make potato gnocchi (Italian dumplings) then we’ll toss them in a medley of sauces including, basil pesto, marinara, and brown butter with sage and walnuts. We'll finish with "Cannoli," fried pastry filled with sweetened ricotta and mascarpone cheeses, served on a pool of chocolate sauce, garnished with pistachios.
